Meringues with Strawberries and a Blueberry Cream

Sometimes the simplest of desserts can be the yummiest. One of my favourites is strawberries and cream! I've jazzed mine up with some meringues and infused my cream with blueberry.

I made my own meringues for this, but shop bought ones are just as good.
To infuse the cream with blueberry is very simple. Just heat some blueberries in a pan, with a couple of tablespoons of water, on a low-medium heat. Leave them for around ten minutes, stirring occasionally, and this will allow the natural sugar in the juice of the blueberries to caramelise and become a syrup consistency. Wait for the mixture to cool down and strain through a sieve and then stir the liquid into some whipped cream, and it's as simple as that! You can use the pulp from the blueberries in muffins or smoothies too (the pulp will freeze well). Chop up a few strawberries, crumble some meringues and put it all together in a dish - yum!
